Ingredients
  • 100 grams butter
  • 50 grams coconut flour
  • 1 tablespoon lemon rind
  • 2 tablespoon lemon juice
  • 50 grams honey
  • 1 egg

Instructions
  1. Preheat oven to 170 degrees celsius
  2. Line an oven tray with grease proof paper
  3. Melt butter in saucepan, remove from heat.
  4. Add remainder ingredients
  5. Using a tablespoon, scoop the mixture and roll lightly into balls
  6. Slightly squash the biscuit dough with the back of the spoon
  7. Bake for 10 minutes (check if biscuit is cooked by looking underneath them if brown)
  8. Let cool slightly before eating
Recipe Notes

I did find these biscuits a little on the sweet side. You could easily decrease the honey to 40 grams.
